- 8 oz cooked chicken breast
- 2 1/2 cups cauliflower florets
- 1 carrot, chopped
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 1/2 tbsp grated ginger
- 1/2 tsp turmeric
- 2 tbsp olive oil
- Salt and black pepper to taste
Instructions
- In a cooking pot, heat olive oil over medium heat. Sauté onion and garlic with turmeric and black pepper for 2-3 minutes until fragrant.
- Add cauliflower florets and chicken broth (or water) to the pot. Cover and cook for about 7 minutes until the cauliflower is tender.
- Stir in ginger, dried mint, and carrot; cook for another 5 minutes until the carrot softens. Blend halfway using an immersion blender for a creamy consistency.
- Incorporate cooked chicken, season with salt and pepper, add more broth if needed, then simmer for an additional 5-6 minutes.
