  • 2 1/4 cups all-purpose flour
  • 10 tbsp unsalted butter
  • 1 cup granulated sugar
  • 3 eggs
  • 1/2 cup buttermilk
  • 8 oz cream cheese
  • 1 tbsp cinnamon
  • 1 tsp nutmeg
  • 1/4 tsp allspice
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup light brown sugar, packed
  • 1/2 cup apple cider reduction
  • 1/3 cup unsweetened apple butter

Instructions

  1. Prepare the apple cider reduction by boiling apple cider until it reduces to about 3 cups. Cool before use.
  2. Preheat the oven to 350°F (175°C) and grease two 9-inch round baking pans.
  3. In a bowl, mix flour, cinnamon, nutmeg, baking powder, baking soda, and salt.
  4. In another bowl, beat softened butter with granulated and brown sugars until fluffy. Add eggs one at a time, then mix in vanilla, buttermilk, and sour cream.
  5. Gradually combine dry ingredients into the wet mixture. Stir in apple cider reduction and apple butter until smooth.
  6. Divide batter between prepared pans and bake for about 50 minutes or until a toothpick comes out clean. Cool cakes in pans before transferring to a rack.
  7. For the caramel filling, melt brown sugar and butter in a saucepan; add heavy cream slowly while whisking until thickened.
  8. For frosting, beat softened butter with cold cream cheese; gradually mix in powdered sugar until fluffy.
  9. Assemble the cake by layering caramel filling between the cakes and frosting the top and sides.
