Ingredients
- Nonstick cooking spray
- 1 ½ cups all purpose flour
- 2 tsp baking powder

- 2 tsp cinnamon
- ¼ cup unsalted butter
- ¼ cup granulated sugar

- ½ tsp vanilla extract
- ½ cup no-sugar added applesauce
- 1 ½ cups peeled and finely diced Honeycrisp apples
- 2 cups powdered sugar
- ⅓ cup plus 2 TBSP apple cider or apple juice
Instructions
- Preheat your oven to 350°F (175°C) and grease a nonstick baking sheet.
- In one bowl, whisk together flour, baking powder, salt, and cinnamon.
- In another bowl, cream the butter and sugar until light and fluffy. Add in the egg, vanilla extract, and applesauce; mix well.
- Gradually combine the dry ingredients with the wet mixture without overmixing. Gently fold in the diced apples.
- Spoon tablespoon-sized amounts onto the prepared baking sheet and bake for 15 minutes until golden brown.
- For the glaze, whisk powdered sugar with apple cider or juice until smooth. Drizzle over cooled fritters before serving.
