  • 1 bundle scallions (6 to 8 oz), thinly sliced
  • 10 cups water
  • 8 oz dried ramen noodles or dried curly noodles
  • 1 cup carrot, cut into thin matchsticks
  • 1/4 cup black rice vinegar
  • 1/4 cup soy sauce
  • 2 tbsp toasted sesame oil

Instructions

  1. In a large pot, combine chicken thighs, water, kosher salt, and pepper. Bring to a boil over medium heat.
  2. Add sliced garlic and chopped ginger once boiling. Reduce to low heat and simmer for 15 minutes until chicken is cooked through.
  3. Cook noodles according to package instructions in a separate pot; drain when done.
  4. Remove chicken from the pot and shred it using two forks or chop into bite-sized pieces. Return chicken to the soup pot along with carrots, vinegar, soy sauce, sesame oil, and scallion whites.
