Ingredients

  • 4 slices center cut chicken bacon
  • 1/2 medium sweet onion, diced
  • 1 large bell pepper, diced
  • 2 large eggs
  • 6 tablespoons liquid egg whites
  • 1/2 cup freshly shredded cheese (Colby Jack or pepper jack)
  • 8 extra thin corn tortillas

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with nonstick spray.
  2. Chop the chicken bacon and cook it in a large frying pan over medium-high heat until crispy. Remove and set aside.
  3. In the same pan, add diced onion and bell pepper; sauté until softened.
  4. Add eggs and egg whites to the pan, scramble until fluffy, then mix in cooked chicken bacon and cheese until melted.
  5. Warm the tortillas in a microwave for about 45 seconds.
  6. Assemble tacos by spooning filling onto one half of each tortilla and folding over.
  7. Bake for 15-18 minutes until golden brown.
