- 4 slices center cut chicken bacon
- 1/2 medium sweet onion, diced
- 1 large bell pepper, diced
- 2 large eggs
- 6 tablespoons liquid egg whites
- 1/2 cup freshly shredded cheese (Colby Jack or pepper jack)
- 8 extra thin corn tortillas
Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking sheet with nonstick spray.
- Chop the chicken bacon and cook it in a large frying pan over medium-high heat until crispy. Remove and set aside.
- In the same pan, add diced onion and bell pepper; sauté until softened.
- Add eggs and egg whites to the pan, scramble until fluffy, then mix in cooked chicken bacon and cheese until melted.
- Warm the tortillas in a microwave for about 45 seconds.
- Assemble tacos by spooning filling onto one half of each tortilla and folding over.
- Bake for 15-18 minutes until golden brown.
