- 1 cup chicken stock

Instructions
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine ground beef, breadcrumbs, grated onion, minced garlic, smoked paprika, dried sage, egg, soy sauce, salt, and pepper. Mix thoroughly.
- Shape the mixture into meatballs about 1 inch in diameter.
- Heat olive oil in a frying pan over medium heat and brown the meatballs on all sides (about 5 minutes). Transfer to a baking sheet and bake for an additional 15 minutes or until cooked through.
- For the sweet potato mash, peel and chop sweet potatoes into chunks; boil until tender (about 15 minutes). Drain and mash with vegan butter, coconut milk, cinnamon, nutmeg, salt, and pepper until smooth.
- For the sauce, simmer apple cider vinegar with maple syrup and Dijon mustard in a small saucepan for about 5 minutes. Stir in chicken stock and cook until thickened.
- Serve meatballs drizzled with sauce alongside sweet potato mash.
