  • 1 pound ground beef
  • 1 cup breadcrumbs (gluten-free if needed)
  • 2 pounds sweet potatoes
  • 4 tablespoons vegan butter
  • 1/2 cup coconut milk (or heavy cream)
  • 1/4 cup maple syrup
  • 1 tablespoon Dijon mustard
  • 1 cup chicken stock
  • 1 small onion (grated)
  • 2 cloves garlic (minced)
  • 2 teaspoons smoked paprika
  • 1 teaspoon dried sage
  • 1 large egg
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine ground beef, breadcrumbs, grated onion, minced garlic, smoked paprika, dried sage, egg, soy sauce, salt, and pepper. Mix thoroughly.
  3. Shape the mixture into meatballs about 1 inch in diameter.
  4. Heat olive oil in a frying pan over medium heat and brown the meatballs on all sides (about 5 minutes). Transfer to a baking sheet and bake for an additional 15 minutes or until cooked through.
  5. For the sweet potato mash, peel and chop sweet potatoes into chunks; boil until tender (about 15 minutes). Drain and mash with vegan butter, coconut milk, cinnamon, nutmeg, salt, and pepper until smooth.
  6. For the sauce, simmer apple cider vinegar with maple syrup and Dijon mustard in a small saucepan for about 5 minutes. Stir in chicken stock and cook until thickened.
  7. Serve meatballs drizzled with sauce alongside sweet potato mash.
