  • 2 lbs boneless country-style beef ribs
  • 3 tbsp brown sugar
  • 2 tsp coarse salt
  • 1 tsp ground mustard
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/8 tsp cayenne
  • 1 cup chicken broth
  • 1/4 cup apple cider vinegar
  • 1 tbsp vegetable oil
  • 1/4 cup ketchup
  • 1 tbsp cornstarch
  • 1 tbsp cold water
  • 1 medium onion, sliced

Instructions

  1. In a large zip-top bag or bowl, combine all dry rub ingredients (brown sugar, coarse salt, black pepper, ground mustard, onion powder, garlic powder, paprika, cayenne). Mix well.
  2. Add beef ribs to the bag with vegetable oil; shake until coated evenly.
  3. Set Instant Pot to sauté mode on high. Sear ribs for about 2 minutes on each side until browned; remove and set aside.
  4. Deglaze pot with apple cider vinegar using a wooden spoon to scrape up any browned bits.
  5. Add chicken broth and remaining liquid ingredients. Return ribs to the pot with onion slices on top.
  6. Lock lid and pressure cook on high for 45 minutes; allow natural release for 15 minutes before quick release.
  7. Remove ribs and stir in ketchup mixed with cornstarch slurry into the pot until thickened (about 5 minutes).
  8. Serve ribs topped with BBQ sauce.
