- 3 tbsp brown sugar
- 2 tsp coarse salt
- 1 tsp ground mustard
- 1 tsp black pepper
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp paprika
- 1/8 tsp cayenne
- 1 cup chicken broth
- 1/4 cup apple cider vinegar
- 1 tbsp vegetable oil
- 1/4 cup ketchup
- 1 tbsp cornstarch
- 1 tbsp cold water
- 1 medium onion, sliced
Instructions
- In a large zip-top bag or bowl, combine all dry rub ingredients (brown sugar, coarse salt, black pepper, ground mustard, onion powder, garlic powder, paprika, cayenne). Mix well.
- Add beef ribs to the bag with vegetable oil; shake until coated evenly.
- Set Instant Pot to sauté mode on high. Sear ribs for about 2 minutes on each side until browned; remove and set aside.
- Deglaze pot with apple cider vinegar using a wooden spoon to scrape up any browned bits.
- Add chicken broth and remaining liquid ingredients. Return ribs to the pot with onion slices on top.
- Lock lid and pressure cook on high for 45 minutes; allow natural release for 15 minutes before quick release.
- Remove ribs and stir in ketchup mixed with cornstarch slurry into the pot until thickened (about 5 minutes).
- Serve ribs topped with BBQ sauce.
