- 1/2 cup (114ml) coconut oil (melted)
- 1 large apple (shredded)
- 1 tablespoon vanilla extract
- 2 cups grated carrot (about 3 medium)
- 1/2 cup raisins
- 1/2 cup flaked coconut
- 1/3 cup walnuts (chopped)
Instructions
- Preheat your oven to 400°F (200°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together whole wheat flour, all-purpose flour, brown sugar, baking powder, baking soda, cinnamon, ginger, and salt.
- Add unsweetened applesauce, melted coconut oil, shredded apple, and vanilla extract into the dry ingredients; mix until just combined.
