  • 1 lb. Mafaldine noodles (or fettuccini/linguini)
  • 3 chicken breasts
  • 4 tablespoons olive oil
  • 68 cloves garlic, minced
  • 2 cups heavy whipping cream
  • 1.5 cups shredded parmesan cheese
  • 4 tablespoons blackened seasoning, divided
  • Salt and pepper to taste
  • 2 tablespoons smoked paprika
  • 1 tablespoon cayenne pepper
  • 1 tablespoon onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano

Instructions

  1. Pound chicken breasts to 1/4 inch thickness and rub with olive oil and blackened seasoning.
  2. Heat a skillet over medium-high heat; cook chicken for 3–4 minutes per side until dark amber and cooked through (internal temp at 165°F). Remove and let rest.
  3. In the same skillet, melt butter, sauté remaining garlic until fragrant, then add heavy cream and additional blackened seasoning; simmer for about 5 minutes.
  4. Cook noodles as per package instructions; reserve pasta water before draining.
  5. Stir parmesan into the sauce, adjust seasonings, then combine with cooked noodles. Top with sliced chicken.
