Ingredients
- 1 1/4 cup milk
- 1/4 cup heavy cream
- 1 cup all-purpose flour
- 4 large eggs
- 1 tbsp sugar
- 3 tbsp butter (melted)
- 1/4 tsp salt
- 1 instant vanilla pudding mix (3.4 oz box)
- 1 cup cold milk for filling
- 8 oz frozen whipped topping (thawed)
- 8 oz semi-sweet chocolate chips
- 1 cup heavy cream for ganache
Instructions
- In a mixing bowl, whisk together crepe batter ingredients until smooth. Let rest for about 15 minutes.
- Heat a non-stick skillet over medium heat; lightly grease it. Pour about 1/4 cup of batter into the skillet, swirling to coat evenly. Cook for about 2 minutes until edges lift slightly; flip and cook another minute until set. Repeat with remaining batter.
- In another bowl, whisk instant vanilla pudding mix with cold milk until thickened; gently fold in thawed whipped topping.
- For the ganache, heat heavy cream in a saucepan until simmering, remove from heat, add chocolate chips, stirring until melted.
- Assemble the crepes by placing a generous amount of cream filling in the center and folding over; drizzle with warm chocolate ganache before serving.
