  • 4 salmon filets (about pounds)
  • ¾ cup peach preserves
  • ¼ cup fruit juice
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons soy sauce
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons Dijon mustard
  • 2 teaspoons minced garlic
  • Salt and pepper to taste
  • Fresh peaches for garnish

Instructions

  1. In a medium bowl, mix peach preserves, fruit juice, olive oil, soy sauce, apple cider vinegar, Dijon mustard, garlic, salt, and pepper. Reserve half of the marinade in the refrigerator.
  2. Place salmon filets in a resealable plastic bag with the remaining marinade. Seal and refrigerate for at least 30 minutes.
  3. Preheat oven to 375°F. Heat an oven-safe skillet over medium-high heat with olive oil.
  4. Sear the salmon skin-side up for 2-3 minutes until golden brown; then flip and add sliced peaches.
  5. Pour reserved marinade over the salmon and peaches and transfer skillet to the oven.
  6. Bake for 12-15 minutes until the salmon reaches an internal temperature of 145°F.
  7. Serve immediately with your choice of sides.
