- 8–10 slices chicken bacon, chopped
- 8 breakfast sausage links
- 1 small onion, diced
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 1.5 lbs Russet potatoes, peeled and diced into ½’’ cubes
- 6 large eggs
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- ¼ teaspoon smoked paprika
Instructions
- Cook the sausage links in a skillet over medium heat until browned. Remove from pan.
- Add chicken bacon to the same skillet and cook until crispy; remove and leave grease in the pan.
- Add diced potatoes, season with salt and pepper, and cook until crispy on all sides (8-10 minutes). Push to the side of the pan.
- Sauté onion, bell pepper, and garlic in the pan for about 3 minutes.
- Chop sausage into bite-sized pieces and return to skillet with chicken bacon; sprinkle with smoked paprika.
- Create wells in the mixture for eggs; crack eggs into each well and sprinkle cheese on top.
- Cover the skillet and cook on low heat until egg whites are set (a few minutes).
