  • 2 large egg whites
  • 1 cup granulated sugar
  • 2 tablespoons cocoa powder
  • 1 teaspoon espresso powder
  • ¼ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 tablespoon powdered milk (nonfat dry milk)
  • ½ cup mini chocolate chips

Instructions

  1. Preheat oven to 325°F and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, salt, and baking soda.
  3. In an electric mixer, whisk egg whites until foamy, then mix in sugar, cocoa powder, espresso powder, vegetable oil, vanilla extract, and powdered milk.
  4. Gradually add the flour mixture to the wet ingredients until just combined.
  5. Fold in mini chocolate chips gently.
  6. Spread the batter evenly onto the prepared baking sheet as thinly as possible.
  7. Bake for 20 minutes; remove and cut into desired shapes but do not separate yet.
