  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt & black pepper, to taste
  • 2 cups cherry tomatoes
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ½ cup fresh basil leaves, chopped
  • 1 tbsp balsamic glaze (optional)

Instructions

  1. Preheat your oven to 190°C (375°F).
  2. Season the chicken chunks with olive oil, minced garlic, Italian seasoning, salt, and pepper in a bowl.
  3. Heat a skillet over medium-high heat and sear the seasoned chicken for 2–3 minutes on each side until golden brown.
  4. Transfer the seared chicken to a baking dish and top with diced tomatoes followed by mozzarella and Parmesan cheese.
  5. Bake in the preheated oven for about 20–25 minutes or until fully cooked and cheese is melted.
  6. Garnish with fresh basil before serving hot.
