Ingredients
- 3 medium zucchini
- 2 Tbsp olive oil (divided)
- salt and pepper, to taste
- 1 lb ground beef
- ½ cup black beans
- ½ cup corn
- 1 small onion (diced)
- 2 garlic cloves (minced)
- ½ tsp chili powder
- ½ tsp ground cumin
- ¼ tsp paprika
- 1 cup tomato sauce
- 1 cup shredded Monterey Jack cheese
- Optional garnishes: chopped avocado, sliced green onions, fresh chopped parsley or cilantro
Instructions
- Preheat your oven to 375F.
- Halve the zucchini lengthwise and scoop out the insides. Set aside the flesh.
- Place zucchini halves in a baking pan, drizzle with olive oil, and season with salt and pepper. Bake for 8-10 minutes until slightly softened.
- In a skillet, sauté diced onion in olive oil until translucent. Add minced garlic and cook until fragrant.
- Add ground beef, cooking until browned. Drain excess fat if necessary.
- Stir in spices, reserved zucchini flesh, black beans, corn, and tomato sauce; simmer for about 5 minutes.
- Stuff each zucchini half with the beef mixture, top with cheese, and return to the oven for another 10 minutes or until bubbly.
