  • 2 pounds butternut squash
  • 2 Honeycrisp apples
  • Olive oil
  • Ground turkey
  • 2 small fennel bulbs
  • 1 onion
  • 1 cup grated Gruyere cheese
  • 2 tablespoons pure maple syrup
  • 1/2 teaspoon ground, dried sage
  • 1 1/2 teaspoons Herbes de Provence
  • Salt
  • Black pepper

Instructions

  1. Preheat your oven to 425°F and line a baking sheet with foil.
  2. In a large mixing bowl, combine cubed butternut squash and Honeycrisp apples with olive oil, salt, pepper, maple syrup, dried sage, and Herbes de Provence. Toss until well coated.
  3. Spread the mixture on the prepared baking sheet and roast for about 35 minutes until tender.
  4. While roasting, cook crumbled ground turkey in a cast-iron skillet over medium-high heat until browned. Set aside.
  5. In the same skillet, caramelize sliced fennel and onion for 10-12 minutes until golden brown.
  6. Combine roasted squash mixture with cooked turkey and fennel/onion in a large bowl; adjust seasonings as needed.
  7. Transfer to a medium-sized baking dish, top with grated Gruyere cheese, and broil for a few minutes until bubbly and golden.
