- 1 lb smoked poultry sausage, sliced
- 1 lb boneless skinless chicken breasts or thighs
- 1 cup diced onion
- 1 cup diced celery
- 1 cup diced bell pepper
- 1 finely diced jalapeño (optional)
- 4 chopped garlic cloves
- 1 tsp Cajun seasoning
- 4 cups chicken broth
- ½ cup salsa verde
- ½ cup sour cream
- ¼ cup grated Parmesan
Instructions
- Heat oil in a large pot over medium heat. Cook the sliced smoked poultry sausage until golden brown, about 5–7 minutes. Remove and set aside.
- Season the chicken with Cajun seasoning and cook in the same pot until lightly browned, about 5–7 minutes. Set aside with the sausage.
- Melt butter in the pot and sauté onion, celery, bell pepper, and jalapeño until tender, approximately 7–10 minutes.
- Add garlic, ground cumin, and additional Cajun seasoning; cook for another minute until fragrant.
- Pour in chicken broth and salsa verde; add back cooked chicken and sausage. Bring to a boil, then reduce heat to simmer for 15 minutes.
- Shred or slice the cooked chicken before returning it to the chili.
- Stir in sour cream and Parmesan cheese until well combined.
