  • 1 lb smoked poultry sausage, sliced
  • 1 lb boneless skinless chicken breasts or thighs
  • 1 cup diced onion
  • 1 cup diced celery
  • 1 cup diced bell pepper
  • 1 finely diced jalapeño (optional)
  • 4 chopped garlic cloves
  • 1 tsp Cajun seasoning
  • 4 cups chicken broth
  • ½ cup salsa verde
  • ½ cup sour cream
  • ¼ cup grated Parmesan

Instructions

  1. Heat oil in a large pot over medium heat. Cook the sliced smoked poultry sausage until golden brown, about 5–7 minutes. Remove and set aside.
  2. Season the chicken with Cajun seasoning and cook in the same pot until lightly browned, about 5–7 minutes. Set aside with the sausage.
  3. Melt butter in the pot and sauté onion, celery, bell pepper, and jalapeño until tender, approximately 7–10 minutes.
  4. Add garlic, ground cumin, and additional Cajun seasoning; cook for another minute until fragrant.
  5. Pour in chicken broth and salsa verde; add back cooked chicken and sausage. Bring to a boil, then reduce heat to simmer for 15 minutes.
  6. Shred or slice the cooked chicken before returning it to the chili.
  7. Stir in sour cream and Parmesan cheese until well combined.
