- ½ cup sour cream (or yogurt or applesauce) room temperature
- 2 large eggs (room temperature)
- 1 ½ tsp vanilla extract
- 1 ½ cups shredded carrots (about 1/2 lb carrots)
- 16 oz cream cheese (room temperature – two packages)
- ½ cup granulated sugar

Instructions
- Preheat your oven to 350°F and grease a 9×13-inch baking dish.
- In a large bowl, whisk together all dry ingredients: flour, sugars, baking soda, baking powder, salt, and spices.
- In another bowl, mix oil, sour cream (or yogurt/applesauce), eggs, and vanilla until well combined.
- Combine wet and dry ingredients; gently fold in shredded carrots.
- In a separate bowl, beat cream cheese with sugar and vanilla until smooth; add eggs one at a time.
- Spread half of the carrot batter in the prepared pan; dollop with cheesecake mixture and top with remaining carrot batter. Swirl gently to create marbling.
- Bake for 35–40 minutes or until a toothpick comes out clean.
- Cool completely before refrigerating; serve chilled.
