  • 2 large eggs
  • 1/2 cup canola or vegetable oil
  • 1 cup unsalted butter (softened)
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 13 tablespoons milk
  • green food coloring
  • black food coloring (optional)
  • Round green sprinkles
  • Halloween sprinkles
  • Candy eyeballs
  • Pretzel sticks

Instructions

  1. Preheat oven to 350°F and lightly grease mini muffin pans.
  2. Combine cake mix, eggs, oil, and optional black food coloring in a bowl until well mixed.
  3. Scoop about 1/2 tablespoon of dough into each muffin cup; flatten gently.
  4. Bake for 8–10 minutes until edges are set. Press an indentation in each cookie after removing from the oven; cool completely.
  5. Beat softened butter in a bowl; gradually add powdered sugar, vanilla extract, salt, and milk until smooth. Mix in green food coloring to desired shade.
  6. Pipe green buttercream into cooled cookie cups and decorate with sprinkles and candy eyeballs.
