Ingredients
- 3 large potatoes (peeled and cubed)
- 1–2 tbsp olive oil
- 250 g turkey bacon (chopped)
- 1 onion (finely chopped)
- 2 garlic cloves (crushed)
- 2 cups grated cheddar cheese
- 5 eggs
- ½ cup milk
- ¾ cup heavy cream
- Salt and pepper to taste
Instructions
- Preheat the oven to 180ºC (350ºF).
- Toss cubed potatoes with olive oil and salt, then roast on a baking sheet for about 30 minutes until crispy.
- In a frying pan, cook turkey bacon until crisp. Add onions and sauté until translucent, then stir in garlic.
- In a casserole dish, layer roasted potatoes, the turkey bacon mixture, and half of the cheddar cheese.
- In a bowl, whisk together eggs, milk, cream, salt, and pepper. Pour over the layered ingredients.
- Top with remaining cheddar cheese and bake for 30-40 minutes until golden brown.
