Ingredients

Scale
  • 1 lb ground beef
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 4 cups russet potatoes, peeled and diced (about ½-inch cubes)
  • 3 cups low-sodium beef broth
  • 1 cup milk
  • 1 cup heavy cream (or additional milk)
  • 2 cups shredded sharp cheddar cheese

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it up as you go.
  2. Stir in diced onion and cook until soft, about 4–5 minutes. Add minced garlic and cook for an additional 30 seconds.
  3. Mix in the diced potatoes, salt, pepper, and optional seasonings. Pour in the beef broth and bring to a boil.
  4. Reduce heat to a simmer and cook uncovered for 12–15 minutes or until potatoes are fork-tender.
  5. Stir in milk and heavy cream; reduce heat to low.
  6. Gradually mix in shredded cheddar cheese until melted and smooth.
  7. Taste and adjust seasoning as needed; add more broth or milk for desired consistency.
  8. Serve hot topped with your choice of fresh herbs or other toppings.
