  • 12 oz rotini pasta
  • 4 cloves garlic
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded cheddar cheese
  • Cajun seasoning
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 tablespoon butter
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook rotini in salted boiling water according to package instructions until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium-high heat. Season chicken with Cajun spices and cook until browned (6–7 minutes). Remove chicken from skillet.
  3. In the same skillet, melt butter and sauté garlic for 1 minute. Add chicken broth and heavy cream; bring to simmer. Stir in cheeses until melted.
  4. Return cooked rotini and chicken to the skillet, mixing well to coat with sauce. Simmer for an additional 2–3 minutes.
  5. Serve garnished with fresh parsley.
