  • 8 oz. baby bella mushrooms
  • 1 small yellow onion (diced)
  • 3 cloves garlic (minced)
  • 1/3 cup all-purpose flour
  • 3 cups half-and-half
  • 1 cup chicken broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon hot sauce
  • 1 chicken bouillon cube
  • 1 ¼ lbs. boneless skinless chicken breast
  • ¾ cup peas (frozen)
  • 4 oz. drained pimentos
  • salt/pepper (to taste)
  • ½ teaspoon EACH: dried basil, parsley, thyme, onion powder, mustard powder
  • ¼ teaspoon ground sage
  • 1/8 teaspoon pepper, paprika

Instructions

  1. Heat olive oil in a non-stick skillet over medium heat. Season chicken breasts with salt and pepper; cook until golden brown on both sides (about 7 minutes per side). Remove and set aside.
  2. In the same skillet, melt butter and sauté diced onions and minced garlic until fragrant (about 2 minutes). Add mushrooms and cook until softened (about 5 minutes).
  3. Sprinkle flour over the vegetables; stir to combine. Gradually whisk in half-and-half and chicken broth until smooth. Stir in peas, pimentos, herbs, salt, and pepper. Cook until thickened (about 5 minutes).
  4. Dice cooked chicken into bite-sized pieces and fold into the sauce mixture before serving over rice or pasta.
