  • 3 Tbsp butter
  • 4 Tbsp all-purpose flour
  • 2 cups chicken stock
  • Instant Pot mashed potatoes

Instructions

  1. Season chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium heat. Cook chicken for about 5 minutes on each side until it reaches an internal temperature of 165℉. Remove from skillet and set aside.
  2. Lower the heat and add butter to the same pan. Once melted, whisk together flour, onion powder, garlic powder, salt, and pepper in a bowl. Sprinkle into the pan to create a roux, stirring for 30 seconds.
  3. Gradually add chicken stock while scraping any bits from the pan. Whisk until smooth; allow simmering until thickened.
  4. Shred the chicken if desired and return it to the gravy along with juices. Simmer for a few minutes before serving hot over mashed potatoes.
