- 1 tbsp butter
- 2 garlic cloves (minced)
- 1 onion (chopped)
- 3 carrots (sliced)
- 3 celery ribs (sliced)
- 4 cups low-sodium chicken broth
- 4 cups water
- 600 g bone-in skinless chicken thighs
- 1 cup long grain white rice
Instructions
- In a large pot, heat olive oil and butter over medium-high heat. Add minced garlic and chopped onion, cooking until the onion is translucent.
- Stir in sliced carrots and celery, cooking for an additional minute.
- Add chicken broth, water, stock powder, dried parsley, thyme (if using), and black pepper to the pot; mix well.
