  • 3 cups rotisserie chicken
  • 16 oz frozen broccoli
  • 10 oz cream of chicken soup
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 8 oz sharp cheddar cheese
  • 4 tbsp melted butter
  • 2 tbsp lemon juice
  • Salt to taste
  • French fried onions for topping

Instructions

  1. Preheat oven to 350°F.
  2. Cook rigatoni in salted boiling water until al dente; drain and keep warm.
  3. In a large mixing bowl, combine melted butter, cream of chicken soup, mayonnaise, sour cream, half of the cheddar cheese, lemon juice, parsley, and salt; whisk until smooth.
  4. Mix shredded chicken and thawed broccoli with the pasta in the pot; add sauce and stir well.
  5. Transfer mixture to a casserole dish; top with remaining cheese and french fried onions.
  6. Bake uncovered for about 30 minutes until hot and bubbly.
