  • 8 (burrito-size) flour tortillas

Instructions

  1. In a large skillet over medium heat, heat 1 tablespoon of vegetable oil and sauté the diced onion until translucent.

  4. Lay each tortilla flat and add about 1/3 cup of the chicken mixture in the center along with cheese. Fold the sides and roll up tightly.
  5. For frying: Heat remaining oil in a skillet over medium-high heat, then fry chimichangas seam-side down until golden brown (about 3-4 minutes per side).
  6. For baking: Preheat oven to 375°F (190°C) and place chimichangas seam-side down on a parchment-lined baking sheet; bake for 20-25 minutes until golden.
