  • 2 tablespoons olive oil
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 oz mushrooms, sliced (button or cremini)
  • 2 cloves garlic, minced
  • ½ cup chicken broth
  • ½ cup chicken broth (as substitute for Marsala apple vinegar)
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a skillet over medium heat, heat olive oil. Season chicken with salt and pepper, then sauté until golden brown on all sides; remove and set aside.
  3. In the same skillet, sauté mushrooms until browned, then add garlic and cook until fragrant.
  4. Pour in chicken broth and chicken broth; simmer briefly before stirring in heavy cream, Parmesan cheese, and thyme.
  5. Return the chicken to the skillet along with the drained pasta; toss until well combined and heated through.
