- 500g ground chicken
- 1 onion (finely chopped)
- 1 carrot (peeled and finely grated)
- 1 small pear (peeled and grated)
- 1 small apple (peeled and grated)
- 2 tsp freshly chopped parsley
- 1 tsp smoked paprika
- Olive oil
Instructions
- Preheat the oven to 200°C (400°F) and line a baking tray with baking paper.
- Heat olive oil in a frying pan over low heat. Add chopped onion and grated carrot; sauté until soft (about 5 minutes).
- In a small bowl, soak breadcrumbs in milk for about 5 minutes.
- Grate apple and pear onto a clean cloth to extract juice; set juice aside.
- In a mixing bowl, combine all ingredients except chicken; mix well. Gently fold in ground chicken until just combined.
- Shape mixture into approximately 28 meatballs and place on the baking tray.
- Bake for about 20 minutes until golden brown and fully cooked.
