  • 1 onion (finely chopped)
  • 1 carrot (peeled and finely grated)
  • 1 small pear (peeled and grated)
  • 1 small apple (peeled and grated)
  • 2 tsp freshly chopped parsley
  • 1 tsp smoked paprika
  • Olive oil

Instructions

  1. Preheat the oven to 200°C (400°F) and line a baking tray with baking paper.
  2. Heat olive oil in a frying pan over low heat. Add chopped onion and grated carrot; sauté until soft (about 5 minutes).
  3. In a small bowl, soak breadcrumbs in milk for about 5 minutes.
  4. Grate apple and pear onto a clean cloth to extract juice; set juice aside.
  5. In a mixing bowl, combine all ingredients except chicken; mix well. Gently fold in ground chicken until just combined.
  6. Shape mixture into approximately 28 meatballs and place on the baking tray.
  7. Bake for about 20 minutes until golden brown and fully cooked.
