  • 2 ribs celery (diced)
  • 34 large carrots (diced)
  • 1 clove garlic (minced)
  • 10 cups chicken stock (or broth)
  • 1 teaspoon salt (to taste)
  • ½ teaspoon freshly ground black pepper (to taste)
  • 1/8 teaspoon dried rosemary
  • 1/8 teaspoon dried thyme
  • 3 cups rotisserie chicken (shredded)
  • 4 cups dry egg noodles or bite-sized pasta

Instructions

  1. In a large stock pot over medium-high heat, melt the butter. Add diced celery and carrots; sauté for about 3 minutes until they begin to soften. Stir in minced garlic and cook for another 30 seconds.
  2. Pour in the chicken stock and season with rosemary, thyme, salt, and pepper. Taste and adjust seasoning as needed.
  3. Bring the broth to a boil and add the noodles. Cook until al dente; avoid overcooking.
  4. Remove from heat and stir in shredded rotisserie chicken.
  5. Taste once more before serving to adjust seasoning.
