  • 2 cups water
  • 2 boneless, skinless chicken breasts
  • 3 tablespoons soy sauce
  • 1 tablespoon miso paste (optional)
  • 2 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 2 green onions, chopped (white and green parts separated)
  • 2 packs instant ramen noodles
  • 1 cup mushrooms, sliced
  • 2 cups baby spinach (or bok choy)
  • Optional toppings: soft-boiled eggs, sliced chili, sesame oil

Instructions

  1. In a large pot, combine chicken broth and water; bring to a boil.
  2. Add the chicken breasts; reduce heat and simmer for 15 minutes until cooked through.
  3. Remove chicken from the pot and shred it into bite-sized pieces.
  4. Stir in soy sauce, miso paste (if using), garlic, ginger, and white parts of green onions into the same pot.
  5. Simmer for another 5 minutes before adding mushrooms; cook for an additional 2-3 minutes.
  6. Add ramen noodles according to package instructions (approximately 3-4 minutes).
  7. In the last minute of cooking, stir in spinach until wilted.
  8. If using soft-boiled eggs, cook them separately in boiling water for 6-7 minutes and then place them in an ice bath before peeling.
  9. Assemble bowls by dividing shredded chicken among them and ladling broth with noodles and veggies over the top.
  10. Top with sliced soft-boiled eggs and any other desired toppings.
