  • 1 kg chicken thigh fillets (skinless and boneless)
  • 1 large garlic clove (minced)
  • 1 tbsp ground coriander
  • 1 tbsp ground cumin
  • 1 tbsp ground cardamom
  • 2 tsp smoked paprika
  • 2 tbsp lemon juice
  • 3 tbsp olive oil
  • 1 cup Greek yogurt
  • 1 clove garlic (crushed)
  • 1 tsp cumin
  • Squeeze of lemon juice
  • Salt and pepper

Instructions

  1. In a large ziplock bag, combine minced garlic, coriander, cumin, cardamom, smoked paprika, lemon juice, olive oil, salt, and pepper. Add chicken fillets and massage the bag to coat evenly. Marinate for at least 3 hours or up to 24 hours.
  2. Mix yogurt sauce ingredients in a bowl until smooth. Cover and refrigerate until needed.
  3. Preheat a non-stick skillet over medium-high heat with olive oil. Cook marinated chicken for about 4-5 minutes on one side until charred; flip and cook for another 3-4 minutes.
  4. Let the chicken rest for 5 minutes before slicing.
