  • 1012 bone-in skinless chicken thighs
  • 3 quarts cold water
  • 1 tablespoon olive oil
  • 2 yellow onions (peeled and diced)
  • 8 large carrots (peeled and chopped)
  • 6 ribs celery (chopped)
  • 5 cloves garlic (minced)
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • Juice from one lemon
  • 2 bay leaves
  • Fresh chopped parsley (for garnish)

Instructions

  1. In a large stockpot, combine chicken thighs with cold water and bring to a boil. Cover and reduce heat to simmer for 30-45 minutes.
  2. Meanwhile, heat olive oil in a Dutch oven over medium heat. Add onions, cooking until translucent. Stir in carrots and celery, cooking for an additional 10-15 minutes.
  3. Add minced garlic, salt, pepper, and bay leaves; stir well.
  4. Once the chicken is cooked, remove it from the pot and strain the broth into the vegetable mixture.
  5. Shred the chicken into bite-sized pieces; return to the pot along with lemon juice. Simmer for another 30 minutes until vegetables are tender.
  6. Taste and adjust seasoning before serving, garnishing with fresh parsley.
