  • 1 lb boneless, skinless chicken breast
  • 2 cups broccoli florets
  • 1/2 yellow bell pepper
  • 1/2 red bell pepper
  • 1/2 cup baby carrots
  • 1/4 cup low sodium chicken broth
  • 3 tbsp low sodium soy sauce
  • 1/4 cup honey
  • 1 tbsp toasted sesame oil
  • 2 tbsp olive oil (divided)
  • salt and pepper (to taste)
  • 2 tsp minced ginger
  • 2 garlic cloves (minced)
  • 1 tbsp corn starch
  • 2 tbsp cold water
  • 1/2 tsp crushed red pepper flakes

Instructions

  1. Prepare all ingredients by cutting the chicken and vegetables into bite-sized pieces.
  2. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Cook the cubed chicken until browned (5-7 minutes).
  3. Add broccoli, bell peppers, baby carrots, ginger, and garlic to the skillet. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
  4. In a mixing bowl, combine cornstarch and cold water to create a slurry. Add chicken broth, soy sauce, honey, sesame oil, and red pepper flakes; mix well.
  5. Pour the sauce over the stir-fried chicken and vegetables, cooking for an additional 2-3 minutes until thickened.
  6. Serve hot over rice or noodles.
