- 1 lb boneless, skinless chicken breast
- 2 cups broccoli florets
- 1/2 yellow bell pepper
- 1/2 red bell pepper
- 1/2 cup baby carrots
- 1/4 cup low sodium chicken broth
- 3 tbsp low sodium soy sauce
- 1/4 cup honey
- 1 tbsp toasted sesame oil
- 2 tbsp olive oil (divided)
- salt and pepper (to taste)
- 2 tsp minced ginger
- 2 garlic cloves (minced)
- 1 tbsp corn starch
- 2 tbsp cold water
- 1/2 tsp crushed red pepper flakes
Instructions
- Prepare all ingredients by cutting the chicken and vegetables into bite-sized pieces.
- Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Cook the cubed chicken until browned (5-7 minutes).
- Add broccoli, bell peppers, baby carrots, ginger, and garlic to the skillet. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
- In a mixing bowl, combine cornstarch and cold water to create a slurry. Add chicken broth, soy sauce, honey, sesame oil, and red pepper flakes; mix well.
- Pour the sauce over the stir-fried chicken and vegetables, cooking for an additional 2-3 minutes until thickened.
- Serve hot over rice or noodles.
