  • 1 ¼ lb. bone-in chicken breast
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 yellow onion (diced)
  • ¾ cup diced carrots
  • 2 ribs celery (diced)
  • 3 cloves garlic (minced)
  • 6 cups chicken broth
  • 10 oz. refrigerated tortellini

Instructions

  1. In a large pot, heat olive oil and butter over medium heat.
  2. Sauté diced onion, carrots, and celery for about 5 minutes until softened. Add minced garlic and cook for an additional minute.
  3. Add the chicken breast, seasonings, and chicken broth; bring to a boil.
  4. Reduce heat to low, cover, and simmer for about 25-30 minutes until chicken is cooked through.
  5. Remove chicken, shred it, then return it to the pot along with tortellini. Cook according to package instructions (about 3-5 minutes).
  6. Serve hot with optional spinach added just before serving.
