- 1 can chickpeas (15 oz), rinsed and drained
- 1 can black beans (15 oz), rinsed and drained
- 1 cup frozen fire-roasted corn, thawed
- 1 cup cherry tomatoes, halved
- 1/2 small red onion, finely diced
- 1 jalapeño, finely diced (optional)
- 1/4 cup cilantro, minced
- 1 avocado, cubed
- Juice of 2 limes (or 1/4 cup lime juice)
- 1 tbsp maple syrup
- Spices: garlic, cumin, chili powder or Tajin, smoked paprika, salt
Instructions
- In a medium mixing bowl, combine chickpeas, black beans, corn, cherry tomatoes, red onion, cilantro, and jalapeño (if using). Mix gently.
- In a separate bowl or cup, whisk together lime juice, maple syrup, garlic (or garlic powder), cumin, chili powder (or Tajin), smoked paprika, and salt until well combined.
- Pour the dressing over the bean mixture and toss gently to ensure everything is evenly coated.
- Place the salad in the fridge for at least one hour to allow flavors to meld.
- Just before serving, mix in the cubed avocado gently.
