- 1 Tbsp olive oil
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp salt
- ½ tsp smoked paprika
- ½ tsp garlic powder
- ¼ tsp black pepper
- ⅛ tsp cayenne pepper (omit if you don't want it too spicy)
- Shredded green cabbage
- Cooked white rice
- 2 small mangos, diced (or 1 large mango)
- 1 large avocado, diced
- ¼ cup red onion, chopped
- 1 jalapeño, deseeded & finely chopped
- 2 Tbsp cilantro, chopped (leaves & stems)
- 1 lime, juiced
Instructions
- In a large bowl, mix the diced mango, avocado, red onion, jalapeño, cilantro, and lime juice to make the salsa. Cover and refrigerate.
- In a small bowl, combine chili powder, cumin, salt, smoked paprika, garlic powder, black pepper, and cayenne (if using). Pat shrimp dry and toss with olive oil and spice mix until coated.
- Heat olive oil in a sauté pan over medium-high heat. Cook shrimp for 2-3 minutes per side until pink and opaque. Remove from heat.
- To assemble bowls: place white rice at the bottom, top with shrimp, shredded cabbage, and salsa. Squeeze fresh lime juice on top before serving.
