  • 1 1/2 pounds boneless skinless chicken breast
  • 1 pound green beans
  • 4 tbsp vegetable oil
  • 5 tbsp soy sauce
  • 1 tbsp apple juice or balsamic vinegar
  • 2 cloves garlic (minced)
  • 2 tbsp brown sugar
  • 1 tbsp cornstarch
  • 1 tbsp apple cider vinegar
  • 1 tsp fresh ginger (grated)

Instructions

  1. Snap the ends off the green beans to remove tough parts.
  2. Dice the chicken into 1/2-inch pieces and place in a bowl.
  3. Add vegetable oil, soy sauce, apple juice (or balsamic vinegar), minced garlic, brown sugar, cornstarch, apple cider vinegar, and grated ginger to the chicken.
  4. Mix well to coat all pieces and marinate in the refrigerator for at least 30 minutes.
  5. Stir-fry the marinated chicken in a wok or large skillet over high heat until cooked through and slightly caramelized, about 5–7 minutes.
  6. Add the green beans and stir-fry until they are tender yet crisp, about another 3–4 minutes.
