  • 1 tsp baking soda
  • ½ tsp kosher salt
  • ½ tsp espresso powder
  • ½ cup olive oil
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 2 room temperature eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 1 cup mashed ripe bananas
  • ½ cup dark chocolate chips (plus extra for topping)
  • ½ cup semi-sweet chocolate chips (plus extra for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare your loaf pan by greasing it with olive oil or using parchment paper.
  2. In a large bowl, whisk together flour, cocoa powder, baking soda, salt, and espresso powder until well combined.
  3. In another bowl, beat olive oil with brown sugar and granulated sugar until smooth. Add eggs one at a time, followed by vanilla extract and sour cream.
  4. Gently fold in the mashed bananas into the wet mixture until fully blended.
  5. Gradually add the dry mixture to the wet mixture without overmixing. Fold in the dusted chocolate chips.
  6. Pour the batter into the prepared loaf pan and top with banana slices and remaining chocolate chips.
  7. Bake for about 55 minutes or until a toothpick inserted into the center comes out clean. Let cool before slicing.
