  • ½ cup seasoned bread crumbs

  • 14 oz whole-berry cranberry sauce
  • ¾ cup ketchup
  • ½ cup beef broth
  • 3 tablespoons brown sugar
  • 3 tablespoons finely chopped onion
  • 2 teaspoons cider vinegar

Instructions

  1. In a large bowl, combine eggs, onion soup mix, bread crumbs, cranberries, and parsley. Add ground beef; mix until just combined. Shape into 1-inch meatballs.
  2. Cook meatballs in batches on a microwave-safe plate covered with waxed paper for about 2-3 minutes until fully cooked. Drain excess grease.
  3. In a separate dish, combine sauce ingredients and heat in the microwave for about 3-4 minutes.
  4. Stir cooked meatballs into the sauce; heat together for an additional 1-2 minutes.
