- 1/2 tsp cinnamon
- 6 tbsp unsalted butter (melted, 85 grams)

- 1/3 cup all-purpose flour (39 grams)
- 1 tbsp ground cinnamon
- 1/3 cup unsalted butter (melted, 76 grams)
- 907 grams cream cheese (softened, 4 packages of 8 oz.)
- 1/4 cup granulated sugar (50 grams)
- 1/2 cup sour cream (120 grams)
- 4 large eggs (room temp)
- 1 tbsp vanilla extract
- 1/2 tsp salt
- 6 tbsp cream cheese (85 grams)
- 1 cup powdered sugar (125 grams)
- 1 tsp vanilla extract
- 1 cup heavy whipping cream (240 ml)
- 1–2 tsp cinnamon powder
Instructions
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine graham cracker crumbs, brown sugar, and cinnamon.
- Pour in melted butter and mix until well combined. Press the mixture into the bottom of a springform pan evenly to form the crust.
- In another bowl, blend cream cheese until smooth using an electric mixer.
- Gradually add brown sugar and granulated sugar until creamy.
- Mix in sour cream, flour, vanilla extract, salt, and eggs one at a time until fully incorporated.
- In a small bowl, combine melted butter with brown sugar and ground cinnamon.
- Pour half of the cheesecake filling into the crust.
- Drizzle half of the cinnamon mixture over it and swirl with a knife. Repeat with remaining filling and swirl again.
- Bake for about 60 minutes or until set in the center but still slightly jiggly.
- Once baked, turn off the oven and let it cool inside with the door ajar for an hour.
- Refrigerate for at least 4 hours before serving.
