  • 1215 frozen dumplings (vegetable, chicken, or homemade)

  • 1 red bell pepper, thinly sliced
  • 1 cup baby spinach or kale leaves
  • 1/2 cup carrots, thinly sliced
  • 1 zucchini, sliced into half-moons
  • Fresh cilantro, chopped
  • Thai basil leaves
  • Red pepper flakes or fresh sliced chili (for heat)
  • Lime wedges (for squeezing on top)
  • Green onions, sliced

Instructions

  1. In a large pot over medium heat, heat the vegetable oil and sauté the onion until translucent. Add garlic and ginger; cook until fragrant.
  2. Stir in the red curry paste and spices; cook for 2 minutes.
