  • 2 lbs ground beef
  • 1 lb Yukon gold potatoes (cut into 1-inch pieces)
  • 4 carrots (peeled and sliced)
  • 1 can green beans (drained)
  • 3 tablespoons tomato paste
  • 1 can diced tomatoes (with juices)
  • 1 can black-eyed peas (drained and rinsed)
  • 1 can corn (drained)
  • 46 cups beef broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon smoked paprika
  • 2 teaspoons chili powder
  • Salt, pepper, and red pepper flakes to taste

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat. Add diced onion and celery; sauté for 2–3 minutes until soft. Stir in minced garlic and cook for another minute.
  2. Add ground beef to the pot, cooking until browned with no pink remaining. Stir in all remaining ingredients, starting with 4 cups of beef broth.
  3. Bring the mixture to a boil over high heat, then reduce to medium-low. Cover and let simmer for about 14–16 minutes until potatoes are fork-tender.
  4. Taste and adjust seasonings as needed before serving hot with your choice of toppings.
