  • 1 cup (226 g) unsalted butter, room temperature
  • 1/2 cup (100 g) granulated sugar
  • 1/2 cup (100 g) light brown sugar, packed
  • 1 large egg, room temperature
  • 2 teaspoons vanilla
  • 3 1/4 cups (405 g) all-purpose flour, spooned and leveled
  • 3/4 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon kosher salt
  • 2 1/2 cups fresh or frozen cranberries
  • 2/3 cup (133 g) granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon orange zest
  • 1 tablespoon orange juice
  • 1 teaspoon vanilla
  • 3/4 cup powdered sugar, sifted
  • 4 tablespoons whole milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 baking pan with parchment paper.
  2. In a stand mixer, cream together room temperature unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt before incorporating it into the wet mixture. Mix until just combined.
  5. Reserve roughly 2 cups of dough for topping and press the remaining dough evenly into the prepared pan.
  6. Bake the crust for about 15 minutes until lightly golden.
  7. Meanwhile, prepare the cranberry filling by mixing cranberries with granulated sugar, cornstarch, orange zest and juice, and vanilla in a large bowl.
  8. Pour the cranberry mixture over the pre-baked crust.
  9. Crumble the reserved dough over the filling.
  10. Bake for an additional 45 minutes, covering with foil for the last 10–15 minutes to prevent over-browning.
