Ingredients
- 1 cup (226 g) unsalted butter, room temperature
- 1/2 cup (100 g) granulated sugar
- 1/2 cup (100 g) light brown sugar, packed
- 1 large egg, room temperature
- 2 teaspoons vanilla
- 3 1/4 cups (405 g) all-purpose flour, spooned and leveled
- 3/4 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon kosher salt
- 2 1/2 cups fresh or frozen cranberries
- 2/3 cup (133 g) granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon orange zest
- 1 tablespoon orange juice
- 1 teaspoon vanilla
- 3/4 cup powdered sugar, sifted
- 4 tablespoons whole milk
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 baking pan with parchment paper.
- In a stand mixer, cream together room temperature unsalted butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla, mixing until well combined.
- In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt before incorporating it into the wet mixture. Mix until just combined.
- Reserve roughly 2 cups of dough for topping and press the remaining dough evenly into the prepared pan.
- Bake the crust for about 15 minutes until lightly golden.
- Meanwhile, prepare the cranberry filling by mixing cranberries with granulated sugar, cornstarch, orange zest and juice, and vanilla in a large bowl.
- Pour the cranberry mixture over the pre-baked crust.
- Crumble the reserved dough over the filling.
- Bake for an additional 45 minutes, covering with foil for the last 10–15 minutes to prevent over-browning.
- Allow to cool completely before slicing.
