Ingredients
- 6 oz. feta cheese
- 6 oz. cream cheese
- 1 c. cranberries (fresh or frozen)
- 1/3 c. orange juice
- 2 tbsp. honey, divided
- 1 sprig thyme
- 1 clove garlic, grated or minced
- 1/4 tsp. crushed red pepper flakes
- 2 tbsp. extra-virgin olive oil
- 2 tbsp. toasted chopped pistachios
- Crackers or crostini, for serving
Instructions
- In a small saucepan over medium heat, whisk together orange juice and 1 tablespoon of honey until combined. Bring to a boil, add cranberries and thyme sprig, then reduce heat and cook until cranberries burst (about 7-8 minutes). Remove thyme and stir in orange zest; let cool.
- Drain brine from feta cheese. In a food processor, pulse together feta, garlic, and thyme until crumbly. Add cream cheese and blend until smooth; drizzle in olive oil until fluffy.
