  • 6 oz. cream cheese
  • 1 c. cranberries (fresh or frozen)
  • 1/3 c. orange juice
  • 2 tbsp. honey, divided
  • 1 sprig thyme
  • 1 clove garlic, grated or minced
  • 1/4 tsp. crushed red pepper flakes
  • 2 tbsp. extra-virgin olive oil
  • 2 tbsp. toasted chopped pistachios
  • Crackers or crostini, for serving

Instructions

  1. In a small saucepan over medium heat, whisk together orange juice and 1 tablespoon of honey until combined. Bring to a boil, add cranberries and thyme sprig, then reduce heat and cook until cranberries burst (about 7-8 minutes). Remove thyme and stir in orange zest; let cool.
  2. Drain brine from feta cheese. In a food processor, pulse together feta, garlic, and thyme until crumbly. Add cream cheese and blend until smooth; drizzle in olive oil until fluffy.
  3. Transfer whipped feta to a serving bowl, top with cooled cranberry sauce, sprinkle with chopped pistachios, and drizzle with remaining honey.
  4. Chill before serving for enhanced flavors.
