  • 1/2 medium onion (chopped)
  • 1 (28 ounce) can crushed tomatoes
  • 1 (10 ounce) can Rotel diced tomatoes with green chilies (with juices)
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 tablespoon chili powder
  • 1 (12 ounce) can corn (drained)
  • 1 (14 ounce) can black beans (drained & rinsed)
  • 1 cup heavy/whipping cream
  • 2 cups cooked chicken (I used a rotisserie chicken)
  • Salt & pepper (to taste)

Instructions

  1. In a large soup pot, heat olive oil over medium-high heat and sauté chopped onion until lightly browned (5-7 minutes).
  2. Add crushed tomatoes, Rotel, and chicken broth to the pot, followed by garlic powder, smoked paprika, chili powder, corn, and black beans. Stir well.
  3. Bring the mixture to a boil; then reduce heat and simmer for about 5 minutes with the pot covered slightly ajar.
  4. Prepare your desired toppings while the soup simmers.
  5. Stir in heavy cream and cooked chicken; warm through for 3-5 minutes. Season with salt and pepper to taste.
  6. Serve hot topped with your choice of tortilla strips, avocado, cheese, or cilantro.
