- 2 cups uncooked orzo
- 2 cups half-and-half
- 3 cups low-sodium chicken broth
- 1½ cups grated Parmesan cheese
- 2 tablespoons chopped parsley (for garnish)
Instructions
- Season the chicken breasts with salt, pepper, and paprika.
- In a large skillet, heat olive oil over medium-high heat and sear the chicken for about 5 minutes per side until cooked through. Transfer to a warm plate.
- In the same skillet, sauté asparagus for about 3 minutes until slightly softened. Set aside.
- Sauté onion and garlic in the skillet for about 3 minutes until the onion is translucent.
