  • 15.87 oz Mascarpone cheese
  • 1 tsp Vanilla extract
  • 1/2 cup Pumpkin puree
  • 2/3 cup Granulated sugar
  • 1/3 cup Brown sugar
  • 2 tsp Pumpkin pie spice
  • 1/4 tsp Kosher salt
  • 2 cups Heavy cream (cold)
  • 28 Ladyfingers
  • 2 cups Coffee (espresso, or strong coffee)

Instructions

  1. Brew espresso and let it cool slightly.
  2. In a mixing bowl, combine mascarpone cheese, sugars, pumpkin pie spice, and salt. Blend using an electric hand mixer until smooth.
  3. Incorporate pumpkin puree and mix well. Then add cold heavy cream and whip until thickened.
  4. Quickly dip ladyfingers in coffee for 1-2 seconds and layer them in a baking dish.
  5. Spread half of the mascarpone mixture over the ladyfingers, then repeat with another layer of dipped ladyfingers.
  6. Pipe remaining mascarpone mixture on top and refrigerate for at least 4 hours before serving.
