Ingredients
- 15.87 oz Mascarpone cheese
- 1 tsp Vanilla extract
- 1/2 cup Pumpkin puree
- 2/3 cup Granulated sugar
- 1/3 cup Brown sugar
- 2 tsp Pumpkin pie spice
- 1/4 tsp Kosher salt
- 2 cups Heavy cream (cold)
- 28 Ladyfingers
- 2 cups Coffee (espresso, or strong coffee)
Instructions
- Brew espresso and let it cool slightly.
- In a mixing bowl, combine mascarpone cheese, sugars, pumpkin pie spice, and salt. Blend using an electric hand mixer until smooth.
- Incorporate pumpkin puree and mix well. Then add cold heavy cream and whip until thickened.
- Quickly dip ladyfingers in coffee for 1-2 seconds and layer them in a baking dish.
- Spread half of the mascarpone mixture over the ladyfingers, then repeat with another layer of dipped ladyfingers.
- Pipe remaining mascarpone mixture on top and refrigerate for at least 4 hours before serving.
