  • 2 Tbsp minced garlic
  • 1 Tbsp Italian seasoning
  • 7 cups chicken broth
  • 28 oz + 14 oz cans diced tomatoes (undrained)
  • 1 lb uncooked turkey sausage (mild or spicy)
  • 10 oz small frozen cheese tortellini
  • 4 cups fresh baby spinach
  • 1/2 cup freshly shredded parmesan cheese
  • 3/4 cup heavy whipping cream (optional)

Instructions

  1. Prepare ingredients by chopping onions and mincing garlic.
  2. In your slow cooker, combine onions, garlic, Italian seasoning, chicken broth, and diced tomatoes.
  3. Remove casing from turkey sausage and crumble into small pieces before adding to the slow cooker.
  4. Set the slow cooker on low for 5 hours to let flavors meld beautifully.
  5. About 30 minutes before serving, stir in tortellini and spinach.
  6. Just before serving, mix in parmesan cheese and heavy cream if desired.
