Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1½ cups whole milk
- ½ cup shredded cheddar cheese
- ½ cup grated Parmesan cheese

- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika

Instructions
- Season chicken with garlic powder, onion powder, paprika, salt, and pepper. Heat olive oil in a large skillet over medium-high heat and cook chicken for 6-7 minutes on each side until golden brown. Remove and set aside.
- In a separate pot, combine rice with chicken broth and salt; bring to boil then simmer for 18-20 minutes until cooked through.
- In the same skillet used for chicken, melt butter over medium heat. Whisk in flour to create a roux; gradually add milk and broth while whisking until smooth. Stir in spices and cheeses until melted and thickened.
- Add chicken back to the skillet, spoon sauce over it, simmer for an additional 3-5 minutes to meld flavors. Serve over fluffy rice.
